Ham on Romaine, Tomato and Avocado Salad

This is pretty filling. I bought the Sweet Mustard Dressing single serving up by the deli at Walmart where you find those sub sandwiches. It's up on top with other sauces. I hope you like it.

Directions

  1.    Combine the Romaine, tomato and avocado with the dressing. 
  2. Arrange ham on top and enjoy.

Banana Fritters with vanilla ice cream

This is a really nice treat. I like it. I guess you would have to be into fried bananas. I only used granulated sugar to sprinkle at the end because I didn't have confectioner sugar.

Ingredients:   
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon baking soda
  • Pinch of salt
  • 1 large egg
  • 1/4 teaspoon pure vanilla extract
  • 3/4 cup water
  • Vegetable oil, for deep-frying
  • 5 firm bananas
  • Cinnamon & Granulated Sugar or Confectioner Sugar
Directions:

  1.  In a large bowl, combine the flour, granulated sugar, baking soda and salt.
  2. In another bowl, beat the egg, vanilla and water and pour into the dry ingredients; whisk until combined. The batter should be thick enough to coat a spoon; add more water if its too thick.
  3. In a wok, heat about 1-1/2 inches of oil (about 4 cups) to 350 degrees . Line a plate with paper towels.
  4. Peel the bananas; slice them in half crosswise, then cut each piece in half lengthwise. When the oil is hot, dip the banana slices in the batter and slip them into the hot oil, frying 5 or 6 at a time. Fry, turning occasionally, until the fritters are golden, 2 to 3 minutes.
  5. Drain the fritters on paper towel on paper plates and repeat with the remaining bananas. Sprinkle with the cinnamon and granulated sugar or confectioners sugar and serve with vanilla ice cream. 

Soft Chocolate Chip Cookies


Ingredients: 
  • 4 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 cups butter, softened
  • 1 1/2 cups packed brown sugar
  • 1/2 cup white sugar 
  • 2 (3.4 ounce) packages instant vanilla pudding mix
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 4 cups semisweet chocolate chips
  • 2 cups chopped walnuts

Directions:

  1. Preheat oven to 350 degrees F. Mix together the flour and baking soda, set aside.
  2. In a large bowl, Mix together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Stir in the eggs and vanilla. Blend in the flour mixture. Finally, stir in the chocolate chips and nuts. 
  3. Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
  4. Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown.

 

  

Hot German Potato Salad III

This could have turned out better. Maybe it will for you. I will definitely try it again.  I would suggest using a smaller potatoes because I used Russet Potatoes and it was way too big and should have cooked it longer on the stove. I ended up having to put in a bowl what I wanted and put it in the microwave for 3 mins and 30 seconds. I seen this on Allrecipes.

Ingredients: (Makes 12 servings) 
  • 9 potatoes, peeled 
  • 6 slices bacon
  • 3/4 cup chopped onions 
  • 2 tablespoons all-purpose flour 
  • 2 tablespoons white sugar  
  • 2 teaspoons salt  
  • 1/2 teaspoon celery seed 
  • 1/8 teaspoon ground black pepper 
  • 3/4 cup water 
  • 1/3 cup distilled white vinegar 
 Directions:
  1. Bring a large pot of salted water to a boil.  Add potatoes and cook until tender but still firm, about 30 minutes. Drain, cool and slice thin.
  2. Set oven to 350. Place bacon in 13 x 9 pan. Bake for 10 mins then flip and nake for another 10 mins. Drain, crumble and set aside, reserving drippings. ( or you could cook it in the skillet)
  3. Saute onions in bacon drippings until they are golden-brown.
  4. In a small bowl, whisk together the flour, sugar, salt, celery seed, and pepper. Add to the sauteed onions and cook and stir until bubbly, then remove from heat. Stir in water and vinegar, then return to the stove and bring to a boil, stirring constantly. Boil and stir for one minute. Carefully stir bacon and sliced potatoes into the vinegar/water mixture, stirring gently until potatoes are heated through.



 

Little Ham and Swiss Sandwiches

  I love making these for potlucks at work because they go so fast. I stumbled this on Facebook like a couple years ago. and fell in love! and you will too...

Ingredients: 


  • 1 packages of Sweet Hawaiian dinner wheat rolls
  • 12  sandwich slices of Virginia ham (NOT honey ham)
  • 6 slices of  swiss Cheese
  • 1/2 Stick of  Butter
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Garlic Powder 
  • 1 teaspoon Onion Powder
  • 1 teaspoon of Poppy Seed 

Directions: 
  • You will need two 9 x 13 pans.
    Place the bottoms of 12 rolls in pan.
    Place ham on the rolls.
    Cut the cheese slices into 4 parts and place 2 small pieces on each sandwich. 
    Put the dinner roll tops on. 
    In a sauce pan, mix butter, dijon mustard, worcestershire sauce, and dried onions.  Wait until all butter is melted and then pour the melted mixture over the ham sandwiches.
    Sprinkle the buns with poppy seeds and cover with foil.
     Let refrigerate overnight (If not able to wait, it is okay. They still taste great if made right away). Preheat oven to 350 and uncover sandwiches. 
     Bake at 350 for 15-20 minutes and serve. 
    They are great hot and even at room temperature Enjoy!

    Southern Cornbread

    3 eggs, beaten
    2 cups, milk
    2 cups white cornmeal (stoneground)
    1/2 teaspoon baking soda
    2 teaspoons
    1/4 cup butter,  melted
    1/2 teaspoon salt
    1 teaspoon

    Preheat the oven to 375° F.

    Grease cast iron and preheat iron for 10 mins while preparing food.

    Mix soda, baking powder,  salt, and sugar with cornmeal.

    Add buttermilk,  eggs,  and melted butter and mix well.

    Pour into cast iron and bake for 20 mins. Cool and enjoy!

    Chicken & Rice Casserole

     A friend of mine gave me this recipe when I happened to be visiting and he was making this recipe. I asked him for the recipe and I have been making it ever since. 


    4 Chicken Legs
    1 Can of Cream of Mushroom  soup
    1 to 1 1/2 cups of rice


    Bake and season chicken however you like in roaster at 375 degrees for 45 minutes making sure there is about 2 inches of liquid in bottom of roaster. (Not covered with foil) You can bake it a little longer if you kept the skin on to make the chicken crispier. Do not drain the water!

    After 45 minutes, add a can of cream of mushroom soup and 1 to 1 1/2 cups rice, bake additional 30-40 minutes covered with foil until rice is tender. Chicken should fall off bone. Enjoy! 

    I served with green beans on the side. Also I have used other type of chicken like young chicken given from the pantry or other parts of the chicken. You will have to bake chicken longer if you're using a bigger chicken.  My suggestion, if you cook 2 cups of rice put in 2 cans of cream of mushroom soup. I hope you enjoy this recipe as much as I do.

    Snickerdoodle Bars

    Browsing through Pinterest, I stumbled upon this recipe:

    Snickerdoodle Bars (recipe found at she turned her dreams into plans )

    2-2/3 cups all-purpose flour
    2 teaspoons baking powder
    1 teaspoon salt
    2 cups brown sugar
    1 cup butter, at room temperature
    2 eggs
    1 tablespoon vanilla
    2 tablespoons white sugar
    2 teaspoons ground cinnamon

    1. Preheat oven to 350 degrees. Lightly grease a 9x13 baking pan.

    2. In a medium bowl, whisk together the flour, baking powder and salt. Set aside.

    3. In a large bowl, beat together the butter, brown sugar, eggs and vanilla until smooth. Add the flour mixture to the egg mixture and beat until well blended.

    4. Spread the batter evenly into the prepared pan.

    5. In a small bowl, combine the white sugar and cinnamon. Sprinkle over the batter in the baking pan.

    6. Bake for 25-30 minutes or until the surface springs back when gently pressed.

    7. Remove from oven and let cool.
